This month’s kit has a beautiful photo of Umbrella Rock Near the Boti Falls, Ghana.


The Quad box spices come adhered to a folded piece of paper that has descriptions of the spices and how to use them outside of the recipes in the kit. The spices are labeled with the dish title and a (1) or a (2). Then, inside the envelope you find recipe cards that correspond with the numbered spices. One excellent feature about the recipe cards is that if you fold it in half, it will stand up like a table tent for easy viewing. Inside is the recipe and on the back are key features of the significance of the dish, and the ingredients for the two spice packets for each dish.

The recipes are easy to follow and ingredients can be found at most stores. The spice packets are vibrant in color, smell terrific and tempt you to begin your culinary adventure as soon as you open the envelope!

Nkatenkwan - Ghanaian Culinary Spice Kit

Nkatenkwan is typically made with okra and peanut butter. If these ingredients don’t appeal to you, use other vegetables and or make it a clear soup. Meat can be added optionally. The spice kit includes grains of paradise. They are native to West Africa, mainly from Ghana, and a mild but pungent alternative to black pepper.

Two spice packets are included for this Ghanaian dish.

Nkatenkwan (1): Rosemary, Bay leaves

Nasi Goreng - Indonesian Culinary Spice Kit

Nasi Goreng is the second most delicious meals of the world (voted by CNN readers). It is originally a dish to use up leftovers and it is best cooked with rice from the day before. Earthy glangal makes the taste of this dish outstanding.

There are two spice packets included in the kit.

Nasi Goreng (1): Galangal, turmeric, black pepper, nutmeg, amchoor, tamarind

Waakye - Ghanaian Culinary Spice Kit

The name derives from waakye leave that are typically used to turn the color of the dish to reddish-brown. Baking soda has the same effect. Try this basic dish with side dishes of your choice4. Add grains of paradise to your taste. They are native to West Africa, mainly from Ghana, and add a mild but pungent alternative to black pepper.

Waakye (1): Smoked paprika, thyme, bay leaves.

Dukkah Lamb - Egyptian Culinary Spice Kit

Dukkah is an Egyptian mixture of spices and nuts. Sesame and hazelnuts are most common. The ingredients are toasted to develop a more intense flavor. For a variation, you can add dried herbs.

There are two spice packets to make this Egyptian treat.

Dukkah (1): Organic toasted sesame
Dukkah (2): Toasted coriander, toasted cumin.

I really enjoyed this month’s Spice Breeze Quad Box! It is exciting to learn about the food of Ghana. I have also been fantasizing about planning a trip to Egypt with the family and am eager to test the Dukkah Lamb out and see how we all do with the flavors. The directions are easy to read, the ingredients are easy to source, and every meal should take 30 minutes or less of kitchen time. Having the spice kits on hand makes it easy to have a very creative meal without using your own imagination! I recommend trying this kit if you are itching to travel but are not able, or if you need a bit of a boost in the kitchen. Spice Breeze does a great job of educating subscribers on how to use and provides access to ordering the spices outside of the kit.
