Cuban Sandwiches w/ Browned Plantain & Tuscan Salad

Cuban Sandwiches w/ Browned Plantain & Tuscan Salad Ingredients

These are authentic Cuban sandwiches made with pork tenderloin, swiss cheese, homemade pickled cucumbers, and dijon mustard. The salad is made with Tuscan kale and sweet plantains tossed with a lime-garlic vinaigrette. This was a new recipe for me to try. It was alright, but not something I'd make again I don't think. The salad was simple, yet very good. Love the plantain!

We love pasta, so I knew this dish would be great and it was! Rigatoni coated in a creamy sauce made with parmesan and ricotta cheese and zucchini. A spinach salad to go with it made with romaine lettuce and cucumber drizzled with a tangy vinaigrette.

I've never made crusted chicken before so this was fun to try. I used rosemary, walnuts, and panko for the crust mixture and baked it in the oven with some roasted potatoes, and a side of mixed greens salad. We really enjoyed this meal!

Once again, we really enjoyed making the recipes from Culiniste. I love the meal options each week, how the ingredients have consistently been fresh, and it's a super convenient service! Great for busy families or anyone who loves to cook, but doesn't like to plan and prep too much.
