They’ll not only tell you where it’s from, why it’s unique, but also how to serve it to impress your friends.

Carnivore Club specializes in finding you products that cannot be found at your local grocery store or butcher shop. Our partners are all small artisan producers because we believe in the quality and care each partner takes to create their products.

I thought the packaging was excellent. I loved the box it came in with all the meat vacuumed sealed. The product info card was a great guide to help distinguishing each meat, because I had no idea what was what. Maybe labels on the meat itself would help.

Genoa Salami

This salami was hand-crafted according to century-old salumerie traditions in northern Italy. Selected from an artisan in the Genoa region, this salami boasts a robust flavour, infused with bits of prosciutto ends. Salted and cured for 90 days, it goes well with a bold Italian red wine.

Water Buffalo Bresaola

This is a very unique product found at only one of Toronto’s finest restaurants. This water buffalo bresaola is silky soft, with very little fat and packs a huge amount of flavour due to it being cured in red wine, salt and black peppercorns. The majority of its flavour is derived from using tenderloin from the Quebecois water buffalo, whose diet includes whey from cheese making. This bresaola is cured in-house for around 60 days so it has a “spongy” texture.

Hot Toscano Salami

This hot Toscano salami is made in Ontario by an artisan that trained in Italy, Switzerland and Germany. Using only Ontario Berkshire pork, these cuts are infused with hot chillies and cracked fennel. A very rich, fatty salami, this was cured for 90 days, paying special attention to its curing conditions in order to develop a real spicy heat. Not for the meek, share this cut with those who like a bit of kick to their charcuterie.

Portuguese Chorizo

From the same artisan as at hot Toscano salami, this Portuguese-style chorizo is made with Ontario Berkshire pork, which is prized for its juiciness, flavour and tenderness, its pink-hue and heavy marbling. The pork is seasoned with all-natural ingredients from Portugal and spiced with non-smoked medium paprika for that little bit of heat. This Portuguese-style Chorizo is great in cooking with paella, scallops or serving with robust salty Portuguese cheeses, making it the ideal party food.

Red Deer & Cranberry Pâté

Nothing but the best ingredients make up this pâté. This product has no preservatives, nitrates or any other unnatural materials. Created by an artisan in Quebec’s eastern townships using simple ingredients like wine, herbs and spices from Italy and Canada. The artisan chose to use deer meat raised in Quebec for a traditional and very gamey taste profile. In a true stroke of genius, the artisan uses the tartness of cranberry to offset the gaminess.

I served this at Christmas and literally within minutes it was all devoured. I enjoy everything as well, minus the pate. I just can’t do pate. My favourite was the genoa salami. Carnivore Club also includes a recommended wine pairing, which I think is a great idea. I’m not sure of the value of the box, but I assume it’s a decent value. The portions of each meat were substantial, so I believe it’s worth the price. I really enjoyed this box and love that most of the meat was local. If you’re a meat lover, you’ll no doubt enjoy Carnivore Club and it is a wonderful addition for any party.
