These coffees all sound so good, I don't know which one to try first! The value is very good considering you get to sample 4 different artisan roasters. You'll notice that when you get your coffee the bags are puffy. When coffee beans are roasted, they begin to give off carbon dioxide (CO2). This is one of the ways fresh coffee keeps out air and moisture, both of which make the bean age faster. When you open one of the sealed, puffy bags, the gas that comes out is the CO2 the freshly roasted beans give off. It's normal, and a really good thing, as it helps keep your beans fresh!
